Quick Pinterest-Worthy Breakfast Dishes

Being in college means long nights and rushed early mornings. I don’t always have time to make a huge breakfast, but being the extra person I am, I still enjoy Pinterest-worthy dishes. You might think you don’t have time to do this as well, but you definitely do! Here are just a few pretty, yummy, and substantial breakfast dishes I eat.

  1. Crepe

    Crepes are so simple to make! All you need is: 1 cup of flour, 2 eggs, 1 tbsp of sugar, 1/4 tsp of salt, 1 1/2 cup of milk, and 1 tbsp of butter. These are all ingredients you keep on hand anyway, so very easy. Get a mixing bowl, and mix your eggs and flour. Add the sugar and salt. Next add the milk. Begin to melt your butter in a skillet over medium heat. Slowly drop a bit of batter in the pan, swirling it around until it fully covers the pan. Allow it to cook for 1 min and then flip for another minute. Add any toppings you want. I usually add fresh fruit, but you can add Nutella, peanut butter, preserves, etc. This is a quick breakfast that always makes me feel like a gourmet chef.

    2. Oatmeal

    Sometimes when I need a hearty breakfast, I reach for my go-to oatmeal. My personal favorite is the blueberry flavored oatmeal. The great thing about oatmeal is that it can be customized. You can make your oatmeal as sexy as you want it to be. You can add granola, berries, brown sugar, whatever you want!

    3. “Everything but the kitchen sink” Egg Scramble

    This is my absolute favorite dish to make when I’m in a rush, but still want to eat something that will hold me over until lunch. All you need is an egg and whatever is in your refrigerator. Whisk/scramble your egg and put it to the side. Warm a skillet with a dab of olive oil. Usually, I put a handful of spinach, a few chopped up baby tomatoes, and a bit of jalapeño in the skillet. On days when I’m feeling pretty hungry, I add sliced turkey, sausage, or ham. Any of them work. Sauté all of these ingredients in your pan for 3 minutes or until they are cooked down and then pour in your scrambled egg. Move the mixture around with a spatula until the egg is cooked through and eat up!

4. Grilled Cheese

It’s very hard to mess up this classic. To elevate this yummy sandwich, I suggest spreading some mayonnaise on your bread before placing it in the skillet. Adding mayo adds a little something special to the sandwich. I also recommend mixing different cheeses together. If you want to add even more breakfast to this sandwich add some bacon or even an egg. Sounds yummy!

5. Breakfast Wrap

This last dish is another customizable dish! I usually scramble an egg and dish in a scoop of salsa and cheese. Wrap it all up in a tortilla. You can customize this however you would like. Add some breakfast potatoes or sausage if you have extra time!
